This Truffle and Chocolate Set contains everything you need to create delicious home-made truffles and chocolates. Contains 6 chocolate Moulds, Non Stick Tray, Whisk, Cocoa Shaker, 2 Mini Spatulas, Truffle Cases, Skewers, gift boxed complete with recipes and instructions. Spatula heads are removable and dishwasher safe up to 260 C/ 500F. Spatulas are dishwasher safe. Whisk, chocolate moulds, non-stick tray and cocoa shaker are not dishwasher safe. Do not scour the non-stick tray.

Perfect Christmas Treat:
Chocolate Truffles

Ingredients
Makes about 25 Truffles

  • 150g best quality dark chocolate
  • (70% cocoa solids)
  • 150ml thick double cream
  • knob of unsalted butter

Suggested Flavourings
  • 2 tablespoons of rum, brandy or liqueur,
  • Grated rind of Clementine,
  • 2 tablespoons espresso strength coffee,
  • 20g finely chopped preserved ginger
  • 25g finely chopped hazelnuts

Method

1. Break the chocolate into thumbnail size pieces and place in a mixing bowl.
Bring cream to the boil in a small saucepan and immediately pour over chocolate.
Whisk the mixture and blend thoroughly until all chocolate is melted.

2. Add any flavourings you are using and whisk these in. Allow the mixture (granache) to cool completely in the fridge until set.

3. Once cool use a teaspoon to spoon out enough granache for a truffle-approx 25mm diameter. Using the scooped and flat spatulas form the mixture into a ball shape and place on the non stick tray. Roll each truffle in a dusting of cocoa powder before carefully placing them in individual truffle cases.

4. These truffles are best served chilled and will keep for three days if stored in the fridge.
